The Fig Salad

Fig season is coming to an end here in California, as our main fig season starts late summer…. and rolls into late fall with a smaller season in the spring. To celebrate the end of the season I thought it would be a great time to show you how to make one of the most taste exploding salads you will ever eat. So sweet and so healthy…. this salad is top of my list for parties or when you need a starter to wow your family and friends. Making this salad into a sweet and savory main course is as easy as adding in some salmon, chicken or shrimp. But before we get started a bit of “Fig Education” is in order.

Figs are an amazing source of potassium and are loaded with dietary fiber. Figs help improve digestion and are natural laxatives. They help prevent hypertension, are rich in antioxidants and can help prevent heart disease. Loaded with calcium…. one dried fig has 2% of the daily iron requirement and helps cure iron deficient anemia. This sacred fruit is associated with fertility…. with an abundance of zinc, manganese and magnesium which play a most important role in boosting reproductive health. With all that said…. let’s get started on making this end of the season sweet and healthy salad!!
